Easy Beef Stroganoff

Beef stew meat is a slow-cooking cut.  This is why it works well in stew, since it can be simmered on the stove for hours, resulting in a flavorful, satisfying dish.

But there are many other ways to use stew meat.  One of my favorites is an easy Beef Stroganoff.

Start by heating a bit of oil in a skillet on medium-high, then add the meat to the skillet and brown on all sides.  (I like to first cut the chunks a bit smaller using a kitchen scissors.)

Add salt, pepper, and whatever seasonings you like.  I use celery powder (helps to tenderize the meat), onion powder, basil, cumin, and chili powder.  (Alternatively, you could use celery salt instead of salt and celery powder.)

Add enough water to cover the meat, reduce heat to the lowest setting, add a lid, and simmer for up to 8 hours.  You can check throughout the day to make sure there's still plenty of water, but I find that it's usually fine.

Just before serving, mix a tablespoon or two of flour into about a cup of sour cream.  Add this mixture to the beef, mix well and simmer for a few minutes.

Serve over noodles, rice, or whatever starch you like.
